Usage
Cut on the board
A sheet laid on the cutting board and worked with a knife comes off as one long spiral rope — the starting point for hand stretching. Fed to the cutting rolls instead, the same sheet becomes udon, which is never drawn out.
To the rack
On the stretching rack it is twisted and drawn out fine into somen. Nothing else goes in with it.
